Our story

Joe & Mercy Franco

The heart and soul of El Gringo.

Our journey began when we moved to North Dakota over 15 years ago. What started as a new chapter became home. We fell in love with the community, the people, and the small-town feel.

For our family, food has always been a way of showing love — cooking for friends and family, gathering around the table, and trying dishes together. Although we are Ecuadorian, we found a special love for Mexican cuisine and the joy of sharing it.

What started in our own kitchen grew into a way to cook for this community, and to cater the moments that bring people together.
